Cucumber Crunch by Town MV

Town is a beloved Martha’s Vineyard hot spot with all the friendly vibes of a neighborhood pub combined with fresh, tasty cuisine. From snacks to shareables, sushi, salads and inspired entrees, there’s something for everyone, even if you have food allergies!! They do a great job of offering a wide selection of AGF dishes, and this Cucumber Crunch is one of them. It’s perfect for a summer snack, starter or side.

Ingredients:

  • 4 English cucumbers with 2 tablespoons kosher salt (for purging)

  • 1/8 cup rice wine vinegar

  • 3 tablespoons olive oil

  • 1 tablespoon sesame oil

  • 1 clove garlic,minced 

  • 1/2 tablespoon sugar, honey, or agave

  • 1 tablespoons toasted sesame seeds, plus red pepper flakes to taste

Prep:

Slice cucumbers into 2 inch thick slices, skin on. Toss with kosher salt and let sit in a colander for 20 minutes to purge excess water. Rinse twice and pat dry thoroughly. Whisk together rice vinegar, sesame and canola oil, garlic, sesame seeds and sweetener until everything is combined. Taste and adjust seasoning. Mix cucumbers with dressing and let them marinate for a minimum of four hours in the refrigerator. Serve cold and garnish with sesame seeds and red pepper flakes.
