Cup of Karma Vegan Oat Balls
Our dear friend Polly Simpkins rode a midnight train from Copenhagen to Amsterdam where she met a holy man. He talked to her through the night about importance of honoring the people who inspire and influence our lives. She was so inspired by his storytelling, that started the Cup of Karma Project to give a meaningful platform for people who inspire her to share their stories.
Polly’s Cup of Karma events are beautiful. Free to attend, they feature an array delicious teas and platters of cookies, pastries and cakes — a nod to Polly’s past life owning and operating a tea house on a strawberry farm in Connecticut.
We loved these vegan oat balls so much, and Polly generously shared the recipe. They are easy to make and alpha-gal friendly. Polly’s insider tip - keep them in her freezer so you always have a tasty AGF snack.
Ingredients
3 cups old-fashioned oats
1 1/4 cup creamy peanut butter
3/4 cup maple syrup
1/2 C vegan chocolate chips
Directions
Mix the ingredients together and refridgerate for 30 to 60 minutes to harden. Then scoop into mini balls. We topped them with cocoa nibs, but they’re great without them as well. We kept them in the fridge before serving them for a party and then stored the last couple in our freezer for the perfect snack.
