Mango Coconut Smoothie Bowl
There are so many talented people on this Island!! And just when you think you know someone, you find out they have some talent you never even knew about. We knew Marnely Murray was a marketing maven. And we knew she was trained as a pastry chef. But we didn’t know she also has a food blog called Cooking with Books . We were delighted by to discover it, because her blog has got plenty of AGF recipes. She shared this gorgeous smoothie bowl recipe from back in 2018, and we are obsessed. Clearly, she’s also ahead of her time! Enjoy!
Ingredients
3-4 medium ripe mangoes
3 tablespoons Anima Mundi Coconut Cream Powder*
1 teaspoon ground ginger
Toppings
½ cup fresh blueberries
½ cup coconut flakes
1 cup granola
Instructions
In a blender, add peeled and chopped mango with the coconut cream powder and ginger. Blend until a smooth puree and pour into two bowls.
Top with a variety of toppings in the recipe or your own!
